Kheulweu de Tabaski: Festive marinade with African basil by Feemu Fii Ak Feneen

Ingredients

Kheulweu ingredients:

  • 2 large bunches of fresh African basil (kheulweu / wild basil)
  • 1 whole head of garlic, peeled
  • 2 white onions and 1 fresh pepper
  • 1 tablespoon of Dijon mustard
  • 100 ml vegetable oil, sea salt and ground black pepper

Preparation

  1. Prepare the basil: carefully strip the stems of African basil and wash the leaves in plenty of fresh water. Gently wring them out.
  2. Aromatic pounding: in a traditional mortar or blender, pound the basil leaves with the garlic, cut onions, salt and peppercorns until the consistency of a fine paste.
  3. Combine the marinade: add the mustard and vegetable oil in a drizzle while mixing to emulsify the preparation.
  4. Use: generously massage the legs, ribs and pieces of Tabaski mutton before putting them in the oven or braising them over a wood fire.
  5. Storage: place the excess in an airtight jar in the refrigerator, covered with a protective drizzle of oil.
