Large platter of fresh raw vegetables and homemade dip sauces by Sala

Ingredients

Vegetables from the market:

  • Carrots, cucumbers, two-tone cherry tomatoes
  • Crunchy cauliflower florets, celery stalks, pink radishes and sweet peppers

Accompanying sauces:

  • Cocktail sauce: homemade mayonnaise, yogurt, ketchup, lemon juice and drop of Tabasco
  • Fresh green sauce: Greek yogurt, chives, parsley, grated garlic, salt and black pepper

Preparation

  1. Carefully cut the vegetables: wash with vinegar water. Cut carrots and cucumbers into regular sticks. Cut the cauliflower into small pieces and hull the radishes.
  2. Prepare the two sauces: whisk the cocktail sauce ingredients in a bowl, and mix the Greek yogurt with the herbs and garlic in a second bowl.
  3. Aesthetic presentation: place the two bowls in the center of a large platter and arrange the vegetables in a fan all around, alternating bright colors.
  4. Tasting: serve chilled for a healthy and friendly dinner aperitif.
